Abstract


  • Sorghum, an animal-feed grain of major importance to sustainable agriculture, will be used to deliver a new paradigm in healthy whole-grain foods; slow digestibility plus high antioxidants to reduce risk of type 2 diabetes in overweight adults by addressing the need to eat less and deliver health protective food components. We will identify optimal sorghum varieties, formulations and processes for consumer acceptable sorghum foods then substantiate their health benefits in human dietary studies. This information will catalyse increased share for the Australian agri-food industry in global high-value health-food markets and will benefit public health through new foods for chronic disease risk reduction and its social andeconomic burdens.
